You're probably seeing a pattern here: I'm happy with Minerva paired with just about anyone who isn't an underage student, a Marauder, or Trelawney.
But I'm fond of any older-person or Hogwarts-staff rarepair. I prefer femslash as a rule (I''ve read excellent Poppy/Amelia Bones fic and Pomona/Irma Pince and Minerva/Augusta Longbottom), but I also enjoy older-male slash, especially when Snape is paired with Filch or Flitwick or Slughorn or Moody. I've read wonderful Moody/Scrimgeour fic, too. And Slughorn/Albus. And Moody/Kingsley.
Older-person het rairpairs are fun, too. Some of the best I've read feature Filch/Arabella Figg, Grubbly-Plank/Aberforth, Augusta/Scrimgeour.
