I love the threesome pairings. My favourites are Draco/Ginny/Blaise, Bill/[female]/Charlie and Fred/[female]/George. F&G come as a pair so they have to be a threesome.
I don't really think that any pairing is really that rare anymore. Authors have been pretty avante garde with their pairings.
I wish the archives would have three character search options to accommodate the threesome pairings. They only ever provide two.

Focusing specifically on the OT3 genre, there are several pairs I'd consider common place-- Harry/Ron/Hermione, Harry/Draco/Hermione, Draco/Hermione/Blaise, Lucius/Hermione/Severus, even Severus/Hermione/Draco tend to pop up more often than, like, Voldemort/Ginny/Hermione
My only real threesome interest is Severus/Hermione/Lucius - Slytherin/Gryffindor plottiness, het/slash/bi hotness, and the twists and turns of getting them together will always get me. I've read a little bit of Severus/Harry/Draco and liked it well enough, but I don't seek it out since Harry is not so interesting to me.
I wouldn't consider SS/HP/DM rare though, since it has its own fest. SS/HG/LM is rare-ish at least, definitely.
People write threesomes much less than pairings, so really almost any threesome is probably rare by default, at least in comparison to not-rare pairings.

No, I don't ship threesomes, and don't really like to read them, either. This used not to be true -- if in a HP crossover with some other fandom (I am a crazy HP crossover fan, omgosh) a threesome happened with Harry, I would read it. But now I generally don't go near them.
I'm glad I've finally found someone else who doesn't ship Severus with, like, everything that breathes! Like you said, his character's okay, but he's not that sexy :P

I consider both of the ships above rare because I've only found a handful of Twins/Harry and one of twins/Verity D; it's torture. TORTURE. And then I just have to ask myself, "now, why do you ship such things that aren't very popular?"
I ship threesomes and multiple partners either as a sexual thing or as a polyamorous arrangement; I love the latter especially, when it's well done.
I tend to ship the older ladies of canon (often the professors, for example) and so will just about always go for a F/F/F older!lady story, but I would also gladly read with some Ms thrown in--even M/M/M with the well-characterised older men.
In my head, I'm particularly fond of Minerva McGonagall/Rolanda Hooch/Wilhelmina Grubbly-Plank (also with Amelia Bones replacing one), but really any of the older ladies together in a multiple-partner arrangement is wonderful to me!
I love threesomes. But I usually prefer them if there is one submissive partner and dominant partners. Like tagging and such. I love lots, I especially love Slytherin/Harry/Slytherin.
